Pumpkin season is upon us. What better way to welcome the start of Fall and all things pumpkin than with a perfect pumpkin recipe? We took the grain-free goodness of our Pumpkin Fig bites and paired it with wholesome, vegan ingredients for a healthy twist on a Fall favorite.

Our Vegan Pumpkin Cheesecake Bites are the perfect addition to any of your Fall festivities or holiday get- togethers. With their light and fresh flavor, these tasty treats allow you to capture the flavor of the season without compromising nutritional integrity.

Vegan Pumpkin Cheesecake Bites
Yields: 8-12 cheesecake bites (depending on size)
Preparation time: 20 minutes (+ additional time to prep ingredients the night before)

Refrigeration time required: 12 hours minimum

Ingredients:

Grain-Free Crust Layer

- 2 cups of Lark Ellen Farm Pumpkin Fig grain-free bites
- 2 tsp. Pure maple syrup
- 4 tbsp. coconut oil

“Cheesecake” Layer

- 2 cups of raw cashews
- 4 cups of water (for soaking the cashews)
- 1 can of organic coconut milk (separated)
- 2 tbsp. cashew butter
- 4 tbsp. pure maple syrup
- ½ tsp. pumpkin spice

Kitchen supplies needed: cupcake pan; reusable silicone cupcake liners; food processor or blender equivalent
