Banana Date Bread with Joolies Dates

Decadence. This banana bread was created by the amazing team over at Joolies Dates!  We have made it multiple times now and LOVE doesn't even cut it. This bread is moist, sweet and full of nutrition. We have it on rotation every week. It is perfect sliced and slathered in some nut or seed butter and topped with our granola bites. Enjoy! 
Recipe: 

2 large ripe bananas 

2 eggs or 2 flax eggs 

1/2 cup coconut oil, melted 

2/3 cup granulated sugar

1/3 cup plant-based milk

1 tsp vanilla extract

1 1/2 cups 1:1 GF flour (or all-purpose) 

1/2 tsp baking soda 

1/2 tbsp cinnamon

pinch of sea salt 

2/3 cup chopped Joolies dates 

 

Preheat oven to 350 degrees and line a loaf pan with parchment paper. In a mixing bowl, mash bananas and whisk in eggs. Next in a separate bowl, cream the oil and sugar together then pour it into the mixing bowl. Add in milk and vanilla, then mix until combined. Add in the flour, baking soda, cinnamon, and sea salt. Mix until well combined. Stir in chopped dates. Transfer batter to the lined loaf pan and bake for 50-55 minutes. Let it cool, then slice and serve!
