We all love avocado toast. We wont even lie about it. It means alot to our hearts. But sometimes you just got to switch it up and have fun! In steps this DELICIOUS mushroom and fennel toast from Cacao For Coconuts!!! HEAVEN on earth. Enjoy!
• 2 pieces of toast (I am loving @veganmario sourdough)
• 1/2 a bulb of fennel
• handful of shiitake mushrooms
• olive oil
• fresh thyme
• garlic powder
1. Chop your fennel and mushrooms.
2. Heat up olive oil and sauté everything!
3. Toast your bread.
4. Spread a generous layer of pâté and top with mushroom/fennel mix.
I had this with dinner the other night but it really is a perfect breakfast, snack or lunch too!!
